Braised Leeks with Lemon and Parsley

4 large leeks, washed and trimmed

1 lemon, zested and juiced

1/4 cup of chopped fresh parsley

2 tablespoons of extra-virgin olive oil

1 cup of vegetable broth

Salt and pepper to taste

Preheat your oven to 375°F.

Cut the washed and trimmed leeks into 2-inch pieces.

In a skillet, heat the extra-virgin olive oil over medium-high heat.

Add the leek pieces to the skillet and sauté for 2-3 minutes, or until they are lightly browned on both sides.

In a mixing bowl, whisk together the vegetable broth, lemon zest, lemon juice, and chopped fresh parsley.

Pour the vegetable broth mixture over the leeks in the skillet.

Season the Braised Leeks with Lemon and Parsley with salt and pepper to taste.

Transfer the skillet to the preheated oven and braise the leeks for 25-30 minutes, or until they are tender and caramelized.

Remove the skillet from the oven and let the Braised Leeks with Lemon and Parsley cool for a few minutes before serving.

Serve the Braised Leeks with Lemon and Parsley as a side dish or a light lunch.

This recipe is both delicious and sustainable because it features leeks, which are a nutrient-rich and eco-friendly vegetable. By using vegetable broth instead of meat-based broth, you can create a vegetarian and sustainable braising liquid. Plus, by using lemon and parsley for flavor, you can create a natural and healthy seasoning without relying on salt or artificial ingredients. Enjoy your Braised Leeks with Lemon and Parsley!
