3 medium beets, scrubbed, trimmed, and cut into 1-inch pieces

1 tablespoon olive oil

Salt and pepper to taste

1 cup quinoa

2 cups water or vegetable broth

4 cups mixed salad greens

1/2 cup goat cheese, crumbled

1/4 cup walnuts, toasted and chopped

1/4 cup fresh parsley, chopped

For the Dressing:

1/4 cup extra-virgin olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey

Salt and pepper to taste

Preheat your oven to 400°F (200°C).

Toss the beet pieces with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for about 30 minutes, or until the beets are tender and slightly caramelized.

While the beets are roasting, rinse the quinoa under cold water until the water runs clear. In a saucepan, bring the water or vegetable broth to a boil, then add the quinoa. Reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is tender and the liquid has been absorbed.

In a large bowl, combine the roasted beets, cooked quinoa, mixed salad greens, crumbled goat cheese, toasted walnuts, and chopped parsley.

In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper to make the dressing.

Drizzle the dressing over the salad, then toss gently to combine.

Serve the salad immediately, or refrigerate it for later.
