Roasted Radishes with Lemon and Dill
1 bunch of radishes, washed and trimmed
3 tablespoons of olive oil
1 lemon, zested and juiced
1 tablespoon of fresh dill, chopped
Salt and pepper to taste
Preheat your oven to 425°F.
Cut the radishes in half and place them on a baking sheet.
Drizzle the olive oil over the radishes and toss to coat them evenly.
Season the radishes with salt and pepper to taste.
Roast the radishes in the preheated oven for 15-20 minutes, or until they are tender and slightly browned.
While the radishes are roasting, prepare the lemon and dill dressing. In a small mixing bowl, whisk together the lemon zest, lemon juice, and chopped dill.
When the radishes are done roasting, remove them from the oven and transfer them to a serving dish.
Drizzle the lemon and dill dressing over the top of the roasted radishes.
Serve the roasted radishes as a side dish or a light lunch.
This recipe is both delicious and sustainable because it features radishes, which are a seasonal and locally-grown vegetable. By using olive oil instead of butter, you can reduce the environmental impact of the recipe. Plus, lemon and dill add a refreshing burst of flavor without relying on heavy sauces or seasonings.
